Beef & Cabbage Stir-Fry

When your living in this new Coronavirus world, it’s important to not waste any food.

That means going through your reserves in the pantry or cabinets. I’ve got a couple of cans of refried beans, green chiles, and tomatoes I’m going to try and use up this weekend.

It also means getting the most bang for your buck while you’re at the grocery store. If there’s one food that is guaranteed to go a long way and is dirt cheap, it’s cabbage.

The last time I bought a head of cabbage it was $0.33. THIRTY THREE CENTS! Do you know how long a head of cabbage will last?! It could basically feed an army!

I recommend on stocking up on cabbage right now. You can use fresh cabbage to top tacos or make coleslaw, fry it with bacon for a hearty side, or throw it into casseroles to make more servings. Cabbage is truly the food of this brave, new world.

I made this beef & cabbage stir-fry before we went under isolation, but I’m still eating it now. It’s hearty, spicy, and and filling. I’ve had it for both dinner and lunch and have even wrapped it up in tortillas like mooshu pork. It’s a great meal to serve that’s not only cheap, but will last a long time.

I think those are two categories we’re striving for right now.

Beef & Cabbage Stir-Fry

An easy stir-fry with beef, mushrooms and cabbage.

Ingredients

  • 1 head of cabbage. shredded
  • 1 lb. ground beef
  • 12 oz. mushrooms, sliced
  • 3 green onions, sliced
  • 1 tsp. ground ginger
  • 2 cloves garlic, minced
  • 3 TBS. soy sauce
  • 2 TBS. Sriracha
  • Sesame oil, sesame seeds, green onions and red pepper flakes, for topping

Directions

  1. In a small bowl, stir together ginger, garlic, soy sauce and Sriracha. Set aside.
  2. Heat a wok or large skillet over medium-high heat. Add beef and cook until browned, breaking up with a wooden spoon. Remove cooked beef to a plate. Add green onions, mushrooms and cabbage and continue stir-frying until cabbage cooks down, around 5-6 minutes.
  3. Stir in soy sauce mixture and cooked beef. Heat and cook for another 3-4 minutes. Serve topped with sesame seeds, sesame oil, red pepper flakes and green onions, if desired.
