I’ve discovered that I don’t post very many breakfast recipes on here. It’s not because I don’t love the most important meal of the day, it’s just that I don’t make very many breakfast dishes.
My normal breakfast (that I eat at 10 o’clock at night, by the way) is a 100 calorie English muffin with egg and cheese. When I am feeling frisky and want to change it up, I usually end up making breakfast casseroles or quiches.
This is just another example of that. It’s like a quiche, but slightly different. It’s a breakfast pie! Sounds good, right? It pretty much is all that is good in the world.
You’ve got all your major foods in this breakfast pie, save for fruit. Bell peppers, cheese, sausage, eggs and pie crust. One weird thing about me is that I only eat pie crust when it’s on a savory pie. If it’s a fruit or cream pie, I’ll ditch the crust. Quiche or breakfast pie, I’ll gobble it up.
Country Breakfast Pie

A hearty egg and sausage pie topped with sweet bell peppers and Swiss cheese.
Ingredients
- 1 pkg. ground pork breakfast sausage
- 9″ pie shell
- 1 1/2 cups grated Swiss cheese
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 4 large eggs, slightly beaten
- 3/4 cup cream
Directions
- In a large skillet cook sausage until no longer pink. Crumble then drain.
- Prepare a 9″ pie shell in a pie pan. Mix together sausage and cheese and then sprinkle in the shell.
- In a small bowl, lightly beat together eggs and cream. Stir in bell peppers. Pour egg mixture over sausage in pie shell. Bake at 375 degrees for 40-45 minutes or until eggs are set. Cool on rack for 10 minutes before serving.
