Skewering things and cooking them is one of my favorite ways to make dinner.
It’s easy to put together and takes no time to cook. The best kebabs always have a protein (I’ve made fish, turkey, pork and chicken before) and plenty of veggies that go together. I like to skewer zucchini and onions; those two things are typically on my kebabs.
I found this recipe in a 1970’s Texas cookbook (same as the LBJ barbecue chicken recipe) and went to work on a new type of kebab. The recipe didn’t call for a marinade or any seasonings, so I just seasoned the chicken simply with paprika, cayenne, salt, pepper and garlic powder. I wasn’t feeling like whipping out my grill pan so I used a wire rack on a baking sheet instead. A pop in the oven & many bastings with the bacon grease later…and I had some darn good kebabs.
I dipped my kebabs in ranch, because I am an Okie after all. Everything is better with ranch. These would also taste good dipped into a barbecue sauce or just a bowl or Worcestershire. Ranch is my go-to, though.
The bacon didn’t get real crispy here, but I am a fan of floppy bacon. Pro-tip: if you want your bacon crispy, pan-fry it for a few minutes and let cool before wrapping it around the chicken to bake. You should have crispy bacon in no time.

Chicken, Bacon & Mushroom Kebabs

Skewers of chicken wrapped in bacon, mushrooms, and onions and baked to perfection.
Ingredients
- 1 lb. chicken breast, cut into bite-size pieces
- 9-10 strips bacon, cut into thirds
- 1 tsp. garlic powder
- 1 tsp. paprika
- salt & pepper
- 1/4 tsp. cayenne
- 20-24 whole white mushrooms, stems removed
- 1 onion, cut into wedges
- Wood or steel skewers
Directions
- Preheat oven to 375 degrees. Season chicken with garlic powder, paprika, salt, pepper and cayenne. Wrap each chicken piece in bacon. Skewer bacon-wrapped chicken, onion wedge, and mushrooms, alternating for a balanced kebab.
- Place a wire rack on top of a large baking sheet. Place kebabs on wrack and bake for 45 minutes to an hour, basting with bacon grease that drips to the bottom of the pan every 15 minutes. Serve with ranch or dipping sauce of choice.
