Talk about a transformation. From broccoli’s pale brother to star of most meals: cauliflower is the true Ugly Duckling in society today.
I can’t go one meal without incorporating it somehow. Riced cauliflower has been a huge part of my diet while keto. Roasted cauliflower is one of my favorite side dishes. Heck, I love just raw cauliflower dipped in ranch.
Cauliflower means business in this newfound diet world.
One of the best things to do with the veggie is to make it into a sheetpan dinner. Find what protein works for you (shrimp, sausage, chicken) and what seasoning works for you (simple S&P, garlic parmesan, Italian), pop it into the oven and forget it. Sheetpan meals can be a savior when it comes to busy weeknight dinners.
This sheetpan meal has a simple seasoning (garlic, thyme, S&P) and a generous topping of melty cheese. It’s a simple dinner all contained to one pan, making for easy cleanup and easy baking. I had a few carrots that were on the verge of turning so I threw them in—and it worked!
Sheetpan meals are unapologetic. You can mix and match pretty much any vegetable and it will work. Just remember that some cook faster than other—onions and mushrooms will char before cauliflower or carrots. Other than that, you pretty much can’t go wrong with sheetpan meals.
Sausage and Cauliflower Sheetpan Dinner
An easy sheetpan meal with sausage, cauliflower and cheese.
- 1 lb. kielbasa, sliced
- 1 head cauliflower, cut into florets
- 3 large carrots, cut into chunks
- 1 tsp. garlic powder
- 1 tsp. thyme
- 1 tsp. smoked paprika
- 2 TBS. olive oil
- salt & pepper
- 1/2 cup shredded cheddar cheese, for topping
- Preheat oven to 425 degrees. In a large bowl, toss kielbasa, cauliflower and carrots with olive oil. Season with garlic powder, paprika, thyme, salt and pepper and toss again.
- Lay out on a rimmed baking sheet in an even layer. Roast for 35-40 minutes or until carrots and cauliflower are slightly charred and tender.
