Fried Cabbage Skillet Dinner

Growing up in the South, there are certain food staples that guide your life.

Black-eyed peas. Lima beans. Collard greens. Chicken fried steak. Banana pudding. Fried cabbage.

I grew up on all of those things, save for the last. Fried cabbage didn’t enter my life until 2012. I remember it vividly…

I was living in Abilene, Texas and found a hole-in-the-wall Chinese food restaurant. They had fried cabbage with bacon and red pepper flakes on the buffet. One bite and I was hooked. It was the most delicious thing I had ever tasted! I would go back to that restaurant just for the cabbage. Here I am, going to a Chinese buffet, and just eating cabbage.

I don’t know why I hadn’t had the stuff before then. I guess my mom probably thought I wouldn’t like it when I was a kid (she would probably be right). It’s just not something we cooked like we did collard greens, beans, and salads.

Ever since my brief stint in Abilene I’ve been addicted to the stuff. I make cabbage whenever I get a chance. Cabbage gets thrown in just about everything: sheet pan meals, skillet meals, casseroles. I love the flavor of cabbage—even if it stinks up the house. It’s a sturdy green that tastes wonderful…and even better fried.

Playing off my time-in-Abilene riff, I went for the ultimate recipe: making the Chinese restaurant fried cabbage into a meal. It pretty much already is a meal, what with the bacon (protein) mixed in. I wanted something more so I added smoked sausage and onion. Now THAT’S a meal!

This recipe is simple and really brings back memories of my brief time in Abilene. I hated the place, but loved the food. Some of the best Thai food I had ever eaten in my life can be found in Abilene. Heff’s burgers. Steak Express. The list goes on.

This skillet dinner has all the best things inside. It’s savory and addicting. Bacon and sausage together truly makes the cabbage shine.

Fried Cabbage Skillet Dinner

  • Servings: 4-6

A savory, Southern-style skillet meal with cabbage, bacon, and smoked sausage.

Ingredients

  • 1 head cabbage, chopped
  • 1 lb. smoked sausage, sliced
  • 1 yellow onion, diced
  • 4 slices bacon
  • 1 tsp. garlic powder
  • 1/4 tsp. cayenne pepper (or red pepper flakes)
  • 1/4 cup apple cider vinegar
  • 1/4 cup chicken broth

Directions

  1. In a large skillet, heat bacon over medium heat. Fry bacon until crispy, about 4-5 minutes. Remove bacon to a paper-towel lined plate.
  2. Add onion to bacon drippings. Saute until tender, about 2-3 minutes. Add smoked sausage to skillet and cook for another 1-2 minutes. Add cabbage, garlic powder, cayenne, vinegar and chicken broth.
  3. Let mixture simmer, uncovered, in skillet for 6-7 minutes, stirring occassionally. Cabbage should be tender-crisp. Crumble bacon into cabbage mixture, stir, and serve.

Step-By-Step Instructions
