Jalapeno Popper Chicken

Cream cheese is a godsend.

I’m constantly impressed with the versatility of it. It’s been used in my cheesecakes (duh), lemon bars, icing, casseroles, and stuffed chicken. There’s usually a block of the stuff hanging out in the back of my fridge. I use cream cheese so often it’s a mainstay on my grocery lists.

Cream cheese isn’t really good for you, but if you’re on a low-carb or keto diet, it’s a must. It’s in most every keto recipe I know of; it thickens up sauces and soups and is a great cheese to use for adding fat to your diet.

The best thing to do with cream cheese: stuff it inside something. Anything, really. My favorites are chicken and jalapenos. Get a large breast and slice it in half (butterfly) and then stuff it full of cream cheese and whatever else your heart desires. As for jalapenos—the best thing to do there is to wrap it in bacon and grill it.

That’s, obviously, the inspiration behind this dish. I combined my favorite stuffed chicken with my favorite stuffed jalapenos. Instead of getting your hands dirty and having to use toothpicks to stuff the chicken, this recipe just calls for the stuffing mixture on top. That’s a great thing to do for any amateur homecook who may find stuffing chicken too difficult.

This recipe uses simple ingredients for a simple meal. I served mine with a side salad and that was it for the meal.

Jalapeno Popper Chicken

Ingredients

  • 4 large chicken breast
  • 1 tsp. garlic powder
  • salt & pepper
  • 8 oz. cream cheese, softened
  • 3 jalapeno peppers, diced
  • 1/2 cup cheddar cheese, shredded
  • 6 strips bacon, cooked and crumbled

Directions

  1. Preheat oven to 375 degrees. Season chicken with garlic powder, salt and pepper.
  2. Lay chicken in a large baking dish.
  3. In a small bowl, stir together cream cheese and cheddar. Spread on top of chicken.
  4. Sprinkle bacon and jalapeno on top of cream cheese. Bake, uncovered, for 25-30 minutes or until chicken is cooked through.

Step-By-Step Instructions

Preheat oven to 375 degrees. Season chicken with garlic powder, salt and pepper. Lay chicken in a large baking dish. In a small bowl, stir together cream cheese and cheddar. Spread on top of chicken.

Sprinkle bacon and jalapeno on top of cream cheese. Bake, uncovered, for 25-30 minutes or until chicken is cooked through.
