Cheesy Garlic Roasted Asparagus

The time has come.

After months of 60 degree weather, no snow in sight—we’re finally getting a winter storm.

It may not seem like much, but after more than a year without snow, I can all but guarantee Oklahoma is NOT prepared for the 4-6 inches we might get tonight.

But I’m ready for it. Oh, am I ever ready for it.

I’ve been waiting for a good snow for what seems like forever. I haven’t even been able to drive my new Subaru in the stuff yet! I’m ready for whatever happens tonight into tomorrow.

I’ve got a fully loaded and stocked fridge, too. There’s plenty of good eats in there where I won’t have to venture out for more. There’s enough food in there to feed a small army, thanks to my meal-prepping over the weekend.

One thing I’m looking forward to: asparagus. I’ve got a whole container of roasted asparagus in the fridge. I’m excited to eat it with some buffalo chicken sliders I made, or with a bratwurst skillet dinner that’s portioned up right now in my refrigerator.

This asparagus recipe isn’t anything fancy. It’s nothing special. It IS an easy way to cook a vegetable to where it’s not just boring, blanched, or boiled. Asparagus tastes the best when it’s roasted, and it tastes even better when it’s roasted with garlic and cheese.

Which cheese you choose is up to you, but go for a melty one, like Mozzarella.

Cheesy Garlic Roasted Asparagus

Roasted garlic and asparagus topped with melty cheese for a simple and delicious side dish.

Ingredients

  • 1 large bunch fresh asparagus, woody ends trimmed
  • 2 TBS. olive oil
  • 3 cloves garlic, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. oregano
  • 1/2 to 1 cup shredded mozzarella cheese

Directions

  1. Preheat oven to 400 degrees. In a small bowl, whisk together oil, garlic, salt, pepper and oregano.
  2. Lay out asparagus in a single layer on a rimmed baking sheet. Pour oil mixture on top and toss to coat.
  3. Roast asparagus for 15-20 minutes or until lightly charred. Turn oven to broil.
  4. Top asparagus with cheese and return to oven. Broil until cheese is bubbly and browned, about 2-3 minutes.

Step-By-Step Instructions

Preheat oven to 400 degrees. In a small bowl, whisk together oil, garlic, salt, pepper and oregano.

Lay out asparagus in a single layer on a rimmed baking sheet. Pour oil mixture on top and toss to coat. Roast asparagus for 15-20 minutes or until lightly charred. Turn oven to broil.

Top asparagus with cheese and return to oven. Broil until cheese is bubbly and browned, about 2-3 minutes.
