Sausage and Peppers Stuffed Meatloaf

If there is one thing you rarely see on my blog, it’s meatloaf.

It’s not that I don’t make meatloaf. It’s a staple in my house. I love everything about the easy dinner meal.

The problem with blogging about meatloaf is taking the pictures.

Meatloaf just doesn’t…look good. At all. Sometimes it will look like a log. Sometimes it looks like a gross mish-mash of browns and tans. Those delicious crispy edges around a meatloaf? They don’t look so delicious in pictures.

I’ve made so many interesting meatloaf recipes I haven’t been able to share with you all because of how horrible the pictures came out. I made an apple and ground chicken mini meatloaf recipe that was incredible—but looked like a pile of— you know what. There was this Italian meatloaf with sun-dried tomatoes and gremolata I made once, but it looked like a moldy loaf of bread.

The struggle is real with making meatloaf look decent.

However, I think I nailed it with this one. Maybe it was the marinara & cheese topping, maybe it was using ground turkey instead of beef; this meatloaf actually looks not only edible, but delicious. I’m also going to give credit to the red and orange bell peppers for making this loaf look more vibrant.

This may be the most delectable meatloaf I’ve ever made, too. There is so much flavor here: the Italian sausage, Italian seasoning, garlic, onions & peppers all pack a delicious punch. The topping makes it even better. Who knew topping meatloaf with marinara instead of tomato paste would taste so good?

If you’re looking to shake up your meatloaf routine, then this recipe is for you. It’s definitely not your mama’s meatloaf, that’s for sure.

Sausage and Peppers Stuffed Meatloaf

An Italian-style meatloaf with sausage, turkey, peppers & onions topped with marinara and mozzarella.

Ingredients

  • 1 lb. ground turkey
  • 1 lb. ground Italian sausage
  • 3 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1/2 cup Parmesan cheese
  • 1/2 cup almond flour
  • 1 TBS. Italian seasoning
  • 1/2 tsp. red pepper flakes
  • salt & pepper
  • 2 eggs
  • 1/2 cup marinara
  • 1/4 cup shredded mozzarella

Directions

  1. Preheat oven to 350 degrees. In a large mixing bowl, combine turkey, sausage, garlic, onion, bell peppers, parmesan, almond flour, seasoning, red pepper, salt and pepper. Mix thoroughly with hands. Add eggs and mix well.
  2. Spray a loaf pan with cooking spray and stuff meatloaf mixture inside. Spread marinara on top. Bake, uncovered, for 60-65 minutes until browned and internal temperature reads 165 degrees. Top meatloaf with cheese and return to oven for 5 minutes or until cheese is melted. Let cool before slicing to serve.

Step-By-Step Instructions
